  • 2 cups apple cider
  • 2 tbsp apple cider reduction
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 1/4 cup granulated white sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare the apple cider reduction by simmering the apple cider in a saucepan over medium heat until reduced by half. Allow it to cool before using it in the recipe.
  2. In a mixing bowl, beat together the cream cheese, granulated sugar, and vanilla with a stand mixer until smooth. Place the mixture in the refrigerator to chill while you prepare the cookie dough.
  3. In another bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt. In a large mixing bowl or stand mixer, cream together softened butter with light brown sugar and granulated sugar until fluffy. Add egg yolks and vanilla; mix well. Gradually add in dry ingredients until just combined.
  4. Preheat your oven to 350°F (175°C). Scoop out dough portions and flatten them in your palm. Place about a teaspoon of cheesecake filling in the center before folding the dough over to encase it entirely. Roll into balls.
  5. Place cookie balls on prepared baking sheets lined with parchment paper. Brush melted salted butter on top and sprinkle with spiced sugar mix made from granulated sugar mixed with cinnamon, nutmeg, and allspice. Bake for about 11 minutes or until lightly golden around the edges.
