  • 1 package baby bok choy (about 1 lb), ends trimmed and leaves separated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional)

Instructions

  1. Slice beef against the grain into thin strips. Rinse bok choy and separate leaves.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat until shimmering.
  3. Add sliced beef in batches, cooking for 3-4 minutes until browned; remove and set aside.
  4. In the same pan, sauté garlic and ginger for about 30 seconds until fragrant. Add bok choy and stir fry for another 3-4 minutes until slightly wilted.
  5. Return cooked beef to the pan along with soy sauce (and optional oyster sauce), tossing everything to coat evenly.
  6. Serve immediately over rice or noodles.
