  • 3 tablespoons olive oil
  • 34 garlic cloves (minced)
  • 1 tablespoon achiote powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • Sea salt and black pepper
  • 3 pounds chicken thighs or breasts

Instructions

  1. In a mixing bowl, whisk together orange juice, lime juice, olive oil, garlic, achiote powder, cumin, coriander, oregano, salt, and pepper to create the marinade.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure all pieces are coated well. Seal and refrigerate for at least 30 minutes or up to overnight.
