  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • For the cream cheese filling:
  • 8 oz cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 375°F and line muffin pan with paper cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla; mix well.
  4. Gradually add dry ingredients to wet mixture until combined.
  5. In another bowl, beat cream cheese until smooth; add sugar, egg yolk, and vanilla; mix well.
  6. Fill muffin tins with pumpkin batter and swirl in cream cheese filling using a toothpick.
