  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar for cream cheese swirl
  • 1 large egg yolk (room temperature) for cream cheese swirl
  • 2 teaspoons vanilla extract for cream cheese swirl

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually mix in the dry ingredients until just combined.
  4. In another bowl, beat room temperature cream cheese until smooth. Blend in sugar, egg yolk, and vanilla extract until creamy.
  5. Fill muffin cups about 3/4 full with pumpkin batter and add a tablespoon of cream cheese mixture on top. Gently swirl with a toothpick.
  6. Bake for 18 to 20 minutes until a toothpick inserted comes out clean. Let cool before serving.
