  • ½ cup baking soda
  • 1 egg (beaten for egg wash)
  • 2 cups shredded cheese (cheddar, mozzarella, or your choice)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In another bowl, whisk together flour and kosher salt.
  3. Slowly add the flour mixture to the yeast mixture and stir until a dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Place in an oiled bowl, cover with cloth, and let rise in a warm place for about 30 minutes until doubled in size.
  6. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Boil 10 cups of water in a large pot and add baking soda.
  8. Punch down the risen dough and divide into equal pieces; roll each into a rope shape to form pretzels.
  9. Boil each pretzel in the solution for about 30 seconds using a slotted spoon; place on prepared baking sheet.
  10. Stuff each pretzel with shredded cheese by making a small cut; brush with beaten egg and sprinkle sea salt.
  11. Bake for about 15-20 minutes until golden brown and enjoy!
