  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup whole milk ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup shredded cheese blend (such as Cabot Mac 'n Cheese)
  • 1/2 cup freshly shredded sharp cheddar cheese
  • 4 sage leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (191°C) and prepare a 9×13-inch casserole dish.
  2. Cook the jumbo pasta shells in boiling water for about 7 minutes until al dente. Drain and transfer to an ice bath.
  3. In a skillet over medium-high heat, brown the spicy sausage and add chopped broccolini; cook until softened. Let cool.
  4. In the same skillet over medium-low heat, combine pumpkin puree, water, ricotta, and nutmeg; stir until bubbling. Add cheeses, sage, salt, and pepper until melted.
  5. Pour some sauce into the casserole dish. Mix remaining sauce into cooled sausage mixture before stuffing each shell.
  6. Arrange stuffed shells in the dish, cover with leftover sauce and additional cheese.
  7. Bake for 15-20 minutes until bubbly; broil briefly if desired for crispiness.
