  • 1 jar maraschino cherries (12 ounces), reserving juice
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • ½ cup unsalted butter, at room temperature
  • 4 ounces cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Optional: ½ cup white chocolate melting wafers for drizzling

Instructions

  1. Prepare the cherries by draining and chopping them into bite-sized pieces. Place on paper towels to dry.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Using a stand mixer, cream together butter and cream cheese until fluffy. Gradually mix in sugar until light in color. Add egg, almond extract, vanilla extract, and reserved cherry juice; mix until combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Fold in the chopped cherries and chill dough for at least one hour.
  5. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Scoop cookie dough onto the prepared sheet and bake for about 10 minutes or until edges are golden brown. Let cool briefly before transferring to a wire rack.
  7. For optional white chocolate drizzle, melt white chocolate in intervals in the microwave; drizzle over cooled cookies.
