  • 2 tbsp chopped cilantro
  • 1 tsp fish sauce
  • 1 tsp soy sauce
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp Thai red curry paste
  • 1 tsp turmeric powder
  • Coconut milk (suggested as an addition)

Instructions

  1. In a mixing bowl, combine ground chicken, garlic, ginger, green onions, cilantro, fish sauce, soy sauce, breadcrumbs, egg, salt, and pepper. Mix until just combined.
  2. Form the mixture into small meatballs (about 1 inch) and place them on a parchment-lined plate.
  3. Heat vegetable oil in a frying pan over medium heat. Cook meatballs in batches for about 4-5 minutes on each side until browned and cooked through. Set aside.
  4. In the same pan, sauté minced garlic until fragrant; add Thai red curry paste and turmeric powder. Stir and cook for another minute.
  5. Return the meatballs to the pan and pour in coconut milk. Simmer on low heat for about 10 minutes to meld flavors.
