  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9-by-5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, mix eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Gradually stir dry ingredients into wet ingredients until just combined; gently fold in shredded zucchini and 3/4 cup chocolate chips.
  5. Pour batter into the prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50–60 minutes or until a toothpick comes out mostly clean.
  7. Cool for about 15 minutes before removing from the pan to cool completely.
