  • 4 boneless skinless chicken breasts
  • 1 Tbsp lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 1/2 medium avocados (diced)
  • 2 Roma tomatoes (chopped)
  • 1/2 cup chopped red onion

Instructions

  1. Prepare the marinade by whisking together lime zest, lime juice, olive oil, honey, cilantro, garlic, salt, and pepper in a mixing bowl.
  2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, make the avocado salsa by combining diced avocados, chopped tomatoes, rinsed red onion, minced garlic, and lime juice in another bowl. Season with salt to taste.
  4. Preheat the grill to medium-high heat; lightly brush with olive oil. Grill chicken for about 5–7 minutes per side until fully cooked.
  5. Let the chicken rest before slicing and top each piece generously with avocado salsa before serving.
