Instructions

  1. Preheat the oven to 350°F (175°C). Prepare mini loaf pans by greasing and lining with parchment paper.
  2. In a medium bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla until smooth.
  3. In another bowl, sift together flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually combine with the wet mixture until just mixed.
  4. Divide batter into prepared pans and sprinkle cinnamon sugar on top. Use a toothpick to swirl gently.
  5. Bake for 20-30 minutes depending on pan size or until a toothpick comes out mostly clean. Cool before removing from pans.
