  • 2 lbs beef cubes (chuck or stew meat)
  • 1 can coconut milk (13.5 oz)
  • 1 cup beef or chicken broth
  • 2 tbsp vegetable or coconut oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • Juice of lime
  • Fresh cilantro for garnish

Instructions

  1. Gather all ingredients. Trim beef cubes and chop onion, garlic, and ginger.
  2. In a heavy-bottomed pot over medium-high heat, heat oil. Season beef with salt and pepper; sear until browned on all sides.
  3. Remove beef and sauté onion in the same pot until translucent. Add garlic and ginger; cook until fragrant.
  4. Stir in curry powder, cumin, coriander, and turmeric; cook for about 1 minute.
  5. Return beef to pot; add coconut milk, broth, and lime juice. Mix well.
  6. Bring to a boil; reduce heat to low and simmer for 45 minutes to an hour until beef is tender.
  7. Serve over fragrant basmati rice with warm naan on the side and garnish with fresh cilantro.
