  • 3 lb boneless chuck roast
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp extra virgin olive oil
  • 3 lbs yellow onions
  • 2 cloves garlic, minced
  • 1 tbsp maple syrup
  • 1 tbsp all-purpose flour
  • 2 tbsp extra virgin olive oil
  • 1 cup red apple vinegar or extra beef stock
  • 2 1/2 cups beef stock
  • 1 sprig rosemary
  • 1 bay leaf

Instructions

  1. Season the chuck roast with salt and pepper. In a Dutch oven over medium-high heat, sear the roast on all sides until browned.
  2. Remove the roast and add sliced onions to the pot. Cook on low heat until soft and golden brown (30-40 minutes).
  3. Stir in minced garlic and maple syrup; cook for another minute.
  4. Sprinkle flour over the onions and stir for 2 minutes to incorporate.
  5. Deglaze with red apple vinegar or extra beef stock while scraping up any bits from the bottom.
  6. Return the roast to the pot along with beef stock, rosemary, bay leaf, salt, and pepper.
  7. Cover and bake at 300°F for about 3 hours until fork-tender.
