- 3 lb boneless chuck roast
- 1/2 tsp fine sea salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp extra virgin olive oil
- 3 lbs yellow onions
- 2 cloves garlic, minced
- 1 tbsp maple syrup
- 1 tbsp all-purpose flour
- 2 tbsp extra virgin olive oil
- 1 cup red apple vinegar or extra beef stock
- 2 1/2 cups beef stock
- 1 sprig rosemary
- 1 bay leaf
- Season the chuck roast with salt and pepper. In a Dutch oven over medium-high heat, sear the roast on all sides until browned.
- Remove the roast and add sliced onions to the pot. Cook on low heat until soft and golden brown (30-40 minutes).
- Stir in minced garlic and maple syrup; cook for another minute.
- Sprinkle flour over the onions and stir for 2 minutes to incorporate.
- Deglaze with red apple vinegar or extra beef stock while scraping up any bits from the bottom.
- Return the roast to the pot along with beef stock, rosemary, bay leaf, salt, and pepper.
- Cover and bake at 300°F for about 3 hours until fork-tender.
