  • 2 cups granulated sugar
  • 3 ½ cups cake flour
  • 1 tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • 1.5 quarts Cookies and Cream ice cream
  • 2 cups whipped cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add vanilla extract.
  3. In another bowl, whisk flour, baking powder, and salt; gradually mix into the butter mixture alternating with milk until just combined. Fold in chopped Oreo cookies.
  4. Divide batter between prepared pans and bake for 25–30 minutes until a toothpick comes out clean. Cool cakes in pans for 10 minutes before transferring to wire racks.
  5. Once cooled, place one layer on a serving platter, spread softened ice cream over it, and top with the second layer of cake.
  6. Frost the top and sides with whipped cream; garnish with additional chopped Oreos.
  7. Freeze for at least four hours before serving.
