  • 2 cups fresh blueberries
  • 1 cup butter (softened)
  • 8 oz cream cheese (softened)
  • 1 ½ cups sugar
  • 4 eggs
  • 4 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toss blueberries with 2 tablespoons of flour and set aside.
  3. In a large mixing bowl, cream together softened butter, cream cheese, and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, combine remaining flour (2 cups), baking powder, and salt. Gradually mix into the wet ingredients until just combined. Gently fold in floured blueberries.
  5. Pour batter into two greased loaf pans (9” x 5”). Bake for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool on a wire rack for 10 minutes before removing from pans.
