  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder

  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix together the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, and spices until well combined.
  3. Gently fold in the flour, baking powder, baking soda until just mixed; do not overmix.
  4. Pour two-thirds of the batter into the prepared pan and smooth the top.
  5. In another bowl, mix cream cheese filling ingredients until smooth and pour over the batter in the pan.
  6. Dollop remaining batter on top of the cream cheese layer and gently smooth it out.
  7. Bake for about 48 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
