  • ½ pound Penne pasta
  • 1 pound Boneless skinless chicken breast
  • ½ cup Basil pesto
  • 1 cup Half and half
  • ½ cup Freshly grated Parmesan cheese
  • 1 cup Freshly shredded Mozzarella cheese
  • 1 tablespoon Olive oil
  • 2 Garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 1 cup Chicken broth
  • Salt and pepper (to taste)

Instructions

  1. Boil the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and diced chicken breast seasoned with salt and pepper. Cook until the chicken is browned and cooked through.
  3. In the same skillet, melt butter, whisk in flour until golden brown; then gradually add chicken broth and half & half. Bring to a simmer.
  4. Stir in basil pesto and both cheeses until melted. Add the cooked pasta and chicken to the sauce, mixing well to coat.
  5. Garnish with fresh basil before serving.
