  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot, brown the ground beef with diced onion over medium heat for 5–7 minutes until the beef is cooked through and onion is translucent. Add minced garlic and cook for another minute.
  2. Pour in the beef broth and mix well. Add diced tomatoes (with juice), corn, black beans, and diced potatoes.
  3. Season with smoked paprika, chili powder, ground cumin, salt, and black pepper. Bring to a boil over medium-high heat.
  4. Once boiling, reduce heat to low and cover the pot. Let it simmer for about 20 minutes until potatoes are tender.
  5. Remove from heat; stir in heavy cream or half-and-half along with shredded cheddar cheese until melted.
  6. Serve hot, garnished with sliced green onions, extra cheese, and crushed tortilla chips.
