  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. In a large mixing bowl, combine ground beef, Parmesan cheese, breadcrumbs, parsley, minced garlic, salt, pepper, oregano, and egg. Mix well and form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5-7 minutes; remove and set aside.
  3. In the same pot, sauté onions, carrots, and celery for about 5 minutes until softened. Add garlic and cook for an additional minute.
  4. Stir in diced tomatoes and broth; bring to a simmer while scraping up any brown bits from the pot.
  5. Return meatballs to the pot and let everything simmer for 15-20 minutes until cooked through.
  6. Stir in heavy cream and season with salt, pepper, basil, and oregano. Simmer for another 5 minutes before serving hot.
