  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)

Instructions

  1. Preheat the oven to 425°F.
  2. Butter a baking dish generously.
  3. Salt the sliced zucchini and let rest for 15 minutes to draw out moisture; then dry them with paper towels.
  4. Arrange the zucchini evenly in the baking dish.
  5. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, salt, pepper, and ½ cup parmesan cheese.
  6. Melt butter in a saucepan over medium heat; sauté minced garlic for about 20 seconds.
  7. Pour the cream mixture into the saucepan with garlic, whisking until bubbling.
  8. Stir in ½ cup mozzarella until melted.
  9. Pour the sauce over zucchini; sprinkle remaining cheeses on top.
  10. Bake for 18-22 minutes until golden brown.
