  • 2 medium beets, peeled and cut into wedges
  • 2 medium sweet potatoes, peeled and cubed
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons plain Greek yogurt

  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss beet wedges and sweet potato cubes with olive oil, salt, and pepper. Spread on the baking sheet and roast for 35-40 minutes until tender.
