  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or substitute with coconut milk)
  • 5 oz fresh spinach (or frozen)
  • ½ cup grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Bring a large pot of salted water to boil and cook the gnocchi according to package directions until they float; drain and set aside.
  2. In a skillet or Dutch oven, heat olive oil over medium heat and sauté chopped onion until softened (about 5-7 minutes).
