  • 12 ounces dry pasta
  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup diced sweet onion (such as Vidalia)
  • 1 ½ tablespoons minced garlic
  • 1 teaspoon kosher salt
  • 4 tablespoons fresh basil, chopped and divided
  • 4 tablespoons fresh oregano, chopped and divided
  • 4 tablespoons fresh mint, chopped and divided
  • 1 cup heavy cream
  • ¾ cup grated Romano cheese

Instructions

  1. Cook pasta according to package directions, reserving one cup of pasta water before draining.
  2. Shred the zucchini and set aside.
  3. In a large skillet over medium-high heat, sauté diced onion in olive oil until softened (about three minutes). Add garlic and red pepper flakes for one minute.
  4. Stir in shredded zucchini, salt, pepper, and half of the herbs; cover and simmer on medium-low for about 15 minutes.
  5. Remove the lid and stir in heavy cream and remaining herbs until warmed through.
  6. Mix in grated Romano cheese; adjust sauce consistency with reserved pasta water if necessary. Serve immediately.
