  • 100 g butter (melted)
  • 900 g cream cheese (softened)
  • 200 g caster sugar
  • 160 g sour cream
  • 1 ½ teaspoons vanilla extract
  • Pinch of salt
  • 4 large eggs (lightly beaten)
  • 50 g granulated sugar (for topping)

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a mixing bowl, crush digestive biscuits into fine crumbs and mix with melted butter. Press firmly into the base of a springform pan.
  3. Beat softened cream cheese, caster sugar, and sour cream until smooth. Add vanilla extract and salt; mix well. Gradually incorporate lightly beaten eggs until just combined.
  4. Pour the filling over the crust and bake for about 60 minutes until the center jiggles slightly.
  5. Cool at room temperature before refrigerating for at least 4 hours or overnight.
  6. Before serving, sprinkle granulated sugar on top and caramelize with a kitchen torch until golden.
