  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes with juice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Break apart with a wooden spoon.
  2. Add diced onion and minced garlic to the skillet; sauté until onions are translucent (about 3-5 minutes).
  3. Transfer the mixture into a slow cooker and add kidney beans, black beans, corn, diced tomatoes (with juice), beef broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
  4. Cover and cook on low for about 6 hours or high for 3 hours.
  5. After cooking time is complete, stir well and adjust seasoning if necessary before serving hot.
