  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 ounces crushed fire-roasted tomatoes
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste
  • 23 cups chicken or beef broth

Instructions

  1. Chop the onions and poblanos; measure out all spices.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Transfer the meat to a slow cooker; add in onions, poblanos, spices, tomatoes, hot sauce, butter, bay leaves, and broth.
  4. Cook on low for 2 hours.
  5. Stir in cream cheese and cheddar cheese until melted and creamy.
  6. Add mixed chili beans during the last half hour of cooking; adjust seasoning as needed.
  7. Serve hot with toppings of your choice.
