  • 2 large chicken breasts
  • 1 can black beans
  • 1 can corn
  • 1 can Rotel tomatoes with green chilis
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water

Instructions

  1. Spray the bottom of your crockpot with nonstick cooking spray.
  2. Place chicken breasts in the crockpot and add black beans, corn, Rotel tomatoes, ranch seasoning, cumin, chili powder, onion powder, and water. Stir gently to combine.
  3. Add cream cheese on top without stirring.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 4 hours.
  5. Shred the chicken using two forks right in the crockpot.
  6. Stir until cream cheese is fully melted into the mixture.
  7. Serve hot with your choice of toppings.
