  • 1 pound chicken breast (cut into small chunks)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 1/2 onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 1/2 cups broccoli florets (cut into small pieces)
  • 1 cup orzo
  • 3 cups chicken stock
  • 1 1/2 cups cheese (1/2 cup parmesan and 1 cup cheddar)
  • 1 tablespoon fresh lemon juice
  • Fresh herbs (such as basil, oregano, or parsley)

Instructions

  1. In a large pot over medium heat, add cooking oil. Once hot, add chicken seasoned with salt and pepper; cook for about 5–7 minutes until golden brown.
  2. Add butter, onion, and garlic; sauté for another 3–4 minutes until the onion is translucent.
  3. Stir in broccoli florets and orzo to combine.
  4. Pour in chicken stock; bring to a gentle boil. Reduce heat to low, cover, and simmer for about 15 minutes or until orzo is tender.
  5. Remove from heat; stir in cheese until melted. Add fresh lemon juice for brightness and garnish with chopped herbs before serving.
