  • 1/2 cup cold butter, cubed
  • 3/4 cup all-purpose flour for crumb topping
  • 1 tsp ground cinnamon for crumb topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8×4 bread pans.
  2. In a large mixing bowl, whisk together dry ingredients: flour, salt, baking soda, and spices.
  3. Stir in granulated and brown sugars until well combined.
  4. Create a well in the center; add canola oil and mix until combined.
  5. Incorporate eggs two at a time, mixing thoroughly after each addition.
  6. Blend in pumpkin puree, water, and vanilla extract until smooth.
  7. Distribute batter evenly into prepared pans.
  8. For the crumb topping, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  9. Sprinkle topping over batter in both pans.
  10. Bake for 55-65 minutes or until a toothpick comes out clean.
  11. Cool in pans for 10 minutes before transferring to a wire rack.
