Fajita Chicken Kebabs are a colorful and flavorful way to bring excitement to your summer gatherings. Marinated in a zesty combination of lime and jalapeno, these tender chicken skewers are perfectly paired with vibrant bell peppers and onions.   • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Juice and zest of 1 large lime
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped (seeds removed for less heat)
  • ½ teaspoon kosher salt
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Cut the chicken into bite-sized pieces and place them in a zip-top bag.
  2. Whisk together canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt in a bowl.
  3. Pour the marinade over the chicken, seal the bag tightly, and refrigerate for at least 30 minutes or overnight.
  4. Preheat your grill to medium-high heat.
  5. Cut the bell peppers and onion into chunks and thread them onto skewers with marinated chicken pieces.
  6. Grill the kebabs for about 6 to 8 minutes, turning occasionally until the chicken is cooked through.
  7. Serve warm with fresh cilantro and extra lime juice.
