  • 2 cans diced green chilies
  • 1 can whole kernel corn
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup reduced-fat cream cheese
  • 1/4 cup half-and-half cream
  • Sliced jalapeños
  • Sliced avocados
  • A dollop of sour cream
  • Chopped fresh cilantro
  • Tortilla strips
  • Grated Monterey Jack or Mexican cheese

Instructions

  1. Chop the onion and garlic. Drain and rinse the beans. Trim excess fat from the chicken breasts.
  2. In your slow cooker, layer the chicken at the bottom. Add onions and garlic on top.
  3. Pour in the chicken broth followed by beans, green chilies, corn, and spices.
  4. Cover and cook on low for about 3 hours.
  5. Shred the cooked chicken and return it to the pot along with softened cream cheese and half-and-half; stir until creamy.
