  • 1 chicken breast, sliced
  • 2 garlic cloves, minced
  • 2 medium carrots, peeled and cut into sticks
  • 1 cup cooked jasmine or basmati rice
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 200C (400F). Toss carrot sticks in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until caramelized.
  2. Cook rice according to package instructions; keep warm.
  3. In a skillet over medium heat, melt butter. Add minced garlic; sauté until fragrant. Season chicken with salt and pepper, then cook in the skillet for 5-7 minutes until golden brown and fully cooked.
