  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1 cup milk

Instructions

  1. Boil cubed potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet over medium heat, add olive oil and butter. Season chicken breasts with garlic powder, salt, and pepper; cook until golden brown and fully cooked through. Set aside.
  3. In the same skillet, add more olive oil and sauté onions until soft. Add bell peppers, mushrooms, and minced garlic; cook until tender.
  4. Serve mashed potatoes topped with chicken and surrounded by sautéed vegetables. Garnish with fresh parsley.
