  • 8 oz lo mein noodles

  • 1 cup sliced bell peppers
  • 1 cup shredded carrots
  • 1 cup snap peas
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp brown sugar
  • 1/4 cup chicken broth or water
  • 1 tsp toasted sesame oil
  • 3 green onions
  • 1 tsp fresh ginger

Instructions

  1. Marinate the chicken with soy sauce, cornstarch, and sesame oil for 5–10 minutes.
  2. Cook lo mein noodles as per package instructions; drain and toss with sesame oil.
  3. Whisk together the sauce ingredients in a bowl and set aside.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Cook the marinated chicken until browned; remove from pan.
  5. Sauté minced garlic (and ginger) until fragrant, then add vegetables and stir-fry until crisp-tender.
  6. Return chicken to the pan along with the sauce; simmer for 1–2 minutes.
  7. Toss in cooked noodles and green onions; serve immediately.
