  • ½ cup unsalted butter
  • 2⅔ cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup sour cream
  • ½ cup whole milk
  • 1 large egg

  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • Coarse sugar (for sprinkling)
  • ½ cup powdered sugar
  • 12 tbsp fresh squeezed lemon juice (to taste)
  • 12 tbsp milk, to taste
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F and grease a muffin tray.
  2. In a glass bowl, melt together molasses and butter in the microwave; let cool.
  3. In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  4. Combine brown sugar, sour cream, milk, and egg into the cooled molasses mixture; mix well.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined.
  6. Fill each muffin cup to the top with batter; sprinkle coarse sugar on top if desired.
  7. Bake for 5 minutes at 425°F; reduce temperature to 350°F without opening the door and continue baking for an additional 11-14 minutes.
  8. Cool in the pan for a few minutes before transferring to a wire rack.
  9. Prepare the lemon glaze by mixing powdered sugar with lemon juice until smooth; drizzle over cooled muffins.
