  • 4 boneless chicken thigh fillets
  • 3 tablespoons olive oil
  • 100 ml fresh lime juice
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • 1/2 onion, sliced
  • 5 cups Romaine lettuce
  • 2 avocados, sliced
  • Cilantro and sour cream for garnish (optional)

Instructions

  1. In a bowl, whisk together olive oil, lime juice, cilantro, garlic, brown sugar, chili flakes, cumin, and salt to create the marinade.
  2. Marinate the chicken in half of the mixture for at least 2 hours; refrigerate the remaining marinade.
  3. Grill marinated chicken for 6–7 minutes on each side until cooked through. Let rest before slicing.
  4. Sauté peppers and onions in the same grill pan until tender-crisp.
  5. In a large bowl, combine Romaine lettuce, avocado slices, grilled chicken strips, and sautéed veggies. Drizzle with reserved marinade before serving.
