  • 2 large lemons (thinly sliced)
  • 2 tbsp fresh parsley (chopped)
  • 23 garlic cloves (pressed)
  • 0.5 tbsp Dijon mustard
  • 0.5 tsp salt
  • 0.125 tsp black pepper
  • 2 tbsp light olive oil
  • 2 tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least one hour.
  2. Preheat grill to medium heat (375°F).
  3. In a bowl, mix parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice.
  4. Fold lemon slices and skewer them with salmon cubes onto two skewers at a time.
  5. Brush both sides with the marinade.
  6. Lightly oil the grill grates; place skewers on the hot grill.
