Scale
  • 1 pound ground turkey
  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. Peel and dice the potatoes into small cubes (about 1/2 inch).
  3. Add olive oil to the skillet and swirl to coat. Add diced potatoes and cook for 8-10 minutes until softened and golden brown.
  4. While cooking the potatoes, chop the onion and mince the garlic.
  5. Remove cooked potatoes from the skillet and set aside. In the same skillet, add onion and garlic; cook for about 3-4 minutes until translucent.
  6. Add ground turkey to the skillet; break into smaller pieces while cooking for about 6-8 minutes until fully cooked.
  7. Stir in dried thyme, paprika, salt, and black pepper to season evenly.
  8. Return cooked potatoes to the skillet; pour in chicken broth and stir to combine.
  9. Reduce heat to low, cover, and let simmer for about 5 minutes.
  10. Remove from heat; stir in chopped fresh parsley before serving.
