  • 1/3 cup butterscotch chips, melted and slightly cooled
  • 1/2 cup buttermilk, at room temperature
  • 1 3/4 cups all-purpose flour, spooned and leveled then sifted
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups unsalted butter, softened (for frosting)
  • 1 cup butterscotch chips, melted and slightly cooled (for frosting)
  • 2 1/4 cups powdered sugar, measured then sifted (for frosting)
  • 3/4 tsp butter extract (for frosting)
  • 1/2 tsp vanilla (for frosting)
  • 1/4 cup butterscotch chips (for drizzle)
  • 1 tbsp heavy cream (for drizzle)
  • 1/2 tbsp honey (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together butter, brown sugar, and white sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients along with butterscotch broth and buttermilk until just combined. Fold in melted butterscotch chips.
  4. Fill cupcake liners two-thirds full with batter and bake for about 15 minutes or until a toothpick comes out clean. Cool on a wire rack.
  5. To make the frosting, beat softened butter until creamy; add powdered sugar gradually, then mix in melted butterscotch chips.
  6. Frost cooled cupcakes generously and drizzle with warm butterscotch sauce made by melting additional chips with cream.
