  • 3 skinless chicken breasts (cut into 1-inch chunks)
  • 1/2 cup chicken broth
  • 3 tablespoons orange marmalade
  • 1 cup soy sauce
  • 1 purple onion (cut into 1-inch pieces)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1/2 fresh pineapple (cut into 1-inch pieces)

Instructions

  1. In a gallon freezer bag, add chicken and mix with chicken broth, orange marmalade, soy sauce. Seal and marinate in the fridge for 2-4 hours.
  2. Preheat your grill to medium-high heat. Thread marinated chicken onto skewers alternating with onion, red bell pepper, and pineapple.
  3. Brush the grill with olive oil to prevent sticking. Grill skewers for about 8-10 minutes until the chicken is cooked through, turning occasionally.
  4. Serve garnished with chopped cilantro.
