1–2 Tbs. mild chili powder
2 lbs. ground beef
1 medium yellow onion, diced
4 oz. spaghetti or angel hair pasta, broken into thirds
1 15 oz. can chili beans, undrained
1 46 oz. can tomato juice
1 Tbs. granulated sugar
1 tsp. kosher salt
1 tsp. black pepper
shredded cheddar cheese, for garnish
corn chips, for garnish
sour cream, for garnish
Instructions
Begin by heating your large pot over medium heat. Add the ground beef and cook until browned. Break it apart with your wooden spoon as it cooks.
Once the beef is browned, add the diced onion to the pot. Cook until the onion becomes translucent, about 5-7 minutes.
Stir in the mild chili powder, granulated sugar, kosher salt, and pepper until well combined. Then add the undrained chili beans and tomato juice.
Bring your mixture to a boil. Once boiling, add the broken spaghetti or angel hair pasta. Reduce heat to low and let simmer uncovered for about 20 minutes or until pasta is tender.
Ladle your delicious Hillbilly Chili into bowls and garnish with shredded cheddar cheese, corn chips, and sour cream as desired.
