4 cups all-purpose flour
1/4 cup granulated sugar
1 tsp salt
2 1/4 tsp instant yeast
1 1/4 cups cold whole milk
1 cup unsalted butter, softened
16 chocolate batons or 8 oz semi-sweet chocolate, cut into bars
1 large egg
1 tbsp milk
Instructions
Prepare the dough by mixing flour, sugar, salt, and yeast in a stand mixer. Gradually add cold milk while kneading until soft but slightly tacky. Refrigerate for 30 minutes.
Create the butter layer by beating softened butter with flour until smooth; shape into a rectangle and refrigerate.
Roll out the dough, encase the chilled butter layer within it, and seal the edges tightly.
Roll into a larger rectangle and fold it like a letter. Repeat this folding process three times total, refrigerating between each turn.
Shape croissants by cutting rectangles from rolled dough, placing chocolate at one end, and rolling tightly.
Proof the rolled croissants at room temperature for about an hour before refrigerating again for another hour.
Preheat oven to 400°F (204°C), apply an egg wash, then bake for about 20 minutes until golden.
