  • 2 large honey crisp apples
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup raw or turbinado sugar

Instructions

  1. Prepare crust by mixing flour, sugar, and salt in a stand mixer. Add cold butter until crumbly. Gradually mix in ice water until dough forms.
  2. Chill the dough for at least one hour before rolling it out to about 1/8 inch thick.
  3. For the apple filling, sauté diced apples in butter then add fruit juice, vanilla bean paste, cinnamon, and brown sugar; cook until syrupy.
  4. For blackberry filling, roast blackberries then simmer with sugar and vanilla extract until thickened.
  5. Cut dough into pumpkin shapes using a cookie cutter; assemble the pies with your desired filling and seal edges.
  6. Bake at 375°F for about 25 minutes until golden brown.
