  • 23 jalapeño peppers, seeded and finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup honey
  • Zest and juice of 1 lime

  2. In a mixing bowl, whisk together flour, cornmeal, sugar, baking powder, and salt.
  3. In another bowl, combine buttermilk, melted butter, and eggs; whisk until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fold in corn kernels, jalapeños, and cheddar cheese.
  6. Pour batter into the prepared dish and bake for 25–30 minutes until golden brown.
  7. While baking, mix honey with lime zest and juice in a small bowl for the glaze.
