  • 1 lb potato gnocchi (store-bought or homemade)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Slice chicken into cubes or thin strips. Halve cherry tomatoes and measure out remaining ingredients.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (5–7 minutes). Remove from skillet.
  3. In the same skillet, sauté minced garlic for about 30 seconds, then add cherry tomatoes and cook until softened (about 2 minutes).
  4. Pour in chicken broth, bring to a simmer, then stir in heavy cream along with lemon zest and juice (remove from heat briefly to prevent curdling).
  5. Add gnocchi; cook for about 3–4 minutes until tender. Stir in baby spinach until wilted.
  6. Return cooked chicken to skillet; mix well and season to taste. Garnish with basil or parsley before serving.
