  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup ditalini pasta
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté until softened, about 5-7 minutes.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add rinsed cannellini beans, undrained diced tomatoes (with juice), chicken broth, dried oregano, dried basil, and red pepper flakes (if using). Bring to a simmer.
  4. Reduce heat to low and let it simmer for 20 minutes to meld flavors.
  5. Add ditalini pasta and cook until tender, about 10-12 minutes.
