  • 3 large ripe mangos (peeled and diced)
  • 1/2 cup chilled evaporated milk
  • 3 tablespoons condensed milk (adjust to taste)
  • 1 cup full-fat coconut milk
  • Optional: coconut jelly and mango jelly

Instructions

  1. Cook the sago: In a medium saucepan, bring water to a boil. Add sago pearls and cook until translucent (about 15 minutes), stirring occasionally. Remove from heat, cover, and let sit for another 15 minutes.
  2. Cool the sago: Strain cooked sago and rinse under cold water. Soak in cold water to prevent sticking.
  3. Blend the mangos: In a blender, combine diced mango and evaporated milk; blend until smooth.
  4. Combine ingredients: In a large mixing bowl, mix together drained sago, remaining diced mango, optional jellies, condensed milk, and coconut milk with the mango puree. Adjust sweetness if needed.
  5. Chill and serve: Refrigerate for at least one hour or serve over ice in cups.
