  • 3 large apples
  • 1 onion
  • 5 cloves garlic (or 1 tsp garlic powder)
  • ¼ cup olive oil (or aquafaba)
  • ¼ cup maple syrup
  • 3 tbsp stone ground Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Core the apples and chop them into ½” cubes. Slice the carrots into ¼” thick pieces and dice the onion.
  3. In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, thyme, salt, and pepper.
  4. Add the chopped carrots, apples, onions, and garlic to the glaze and toss until well coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Roast for 15 minutes; flip the mixture and continue roasting for another 10-15 minutes until tender.
