1 lb sirloin steak
3 tbsp olive oil
2 garlic cloves (minced)
1 tbsp lemon juice
2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
1 cup cherry tomatoes (halved)
1 cucumber (diced)
½ red onion (thinly sliced)
Tzatziki sauce (made from Greek yogurt)
Instructions
Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak and marinate in the fridge for at least 30 minutes.
Prepare the tzatziki: Mix Greek yogurt with grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Refrigerate to allow flavors to meld.
