  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • Tzatziki sauce (made from Greek yogurt)

Instructions

  1. Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak and marinate in the fridge for at least 30 minutes.
  2. Prepare the tzatziki: Mix Greek yogurt with grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Refrigerate to allow flavors to meld.
  3. Cook the steak: Heat a skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes on each side until done to your liking. Let rest before slicing against the grain.
